Located on a secluded sanctuary atop the hills in the midst of the resort’s lush greenery, Rima charms the palate with a new menu designed by Executive Sous Chef Gianluca Visciglia.
Guests may choose from a selection of Italian dishes influenced by the Northern and Central parts of Italy, particularly from Tuscany where Chef Visciglia honed his culinary craft. A favorite starter is the cappesante scottate al timo con asparagi e nuvola di tartufo or pan-fried U.S. scallops with sautéed asparagus and truffled air, a delicate dish of rich flavors. The mezzelune ai funghi porcini in salsa di gorgonzola e noci or ravioli filled with cepes in gorgonzola and walnut sauce is creamy delight in every bite.
For the entrees, grilled beef tenderloin served with mashed apple and potato, pan-fried duck liver and red wine sauce, filetto di manzo grigliato, servitor con purea di mele al rosmarino, scolappa di fegato grasso e una salsa al vino rosso, is a highlight for guests seeking to satisfy indulgent cravings.
